A Gingerbread Masterpiece: The St. James Hotel Unveils its Holiday Display

With the arrival of the holiday season, comes the much anticipated gingerbread display created by our very own in-house Pastry Chef, Amy Zerwas! Amy has outdone herself again, creating a stunning replica of the Red Wing Depot, complete with intricate details and festive flair.

A Work of Art

This year’s gingerbread masterpiece is a true labor of love. Chef Amy spent a total of 13 days meticulously recreating each detail of the Red Wing Depot. 

 

Display Stats:

• 44 lbs. of flour
• 11 lbs. of shortneing
• 9.5 lbs. of sugar
• 25 lbs. of molasses
• 25 eggs
• 2 lbs. cinnamon
• 1 lb. clove
• 1 lb. all spice
• 50 lbs. confectioners sugar
• 3 lbs. meringue powder

Let’s not fail to mention the time that went into this amazing creation: 

• One day to plan / cut the stencils
• Two days to bake all of the pieces
• One full week to assemble
• Three full days to decorate
